Meal 1: Two fried eggs, sautéed spinach, and roasted sweet potatoes. I was full and satisfied with this meal, and I didn't even feel the need to add a fruit.
Meal 2: Egg salad on romaine lettuce leaves and a Granny Smith apple with almond butter.
Meal 3: Bruschetta chicken served over zucchini noodles. I was really nervous about this recipe especially the zucchini noodles, but it was really good! I made chicken alfredo for the other three, and I realized very quickly two things: first, making an almost entirely separate meal is a stupid waste of time and energy and second, cooking with non-compliant ingredients is dangerous. I stopped myself at least three times from almost mindlessly tasting things like the alfredo sauce and butter-and-Lawry's covered broccoli.
Workouts: 2 mile walk on treadmill and back/bicep circuit
General Mood & Thoughts: At 11:30 am I was still full from breakfast. That was unheard of prior to W30. Most days I was in dire need of a snack by 9:30 and beyond ready for lunch by 11:30. I also noticed this morning, especially for a Monday, that I felt well rested and more alert at work. I can't say that I'm jumping out of bed at the first ring of my alarm yet, but this is definitely a step in the right direction! Dave made a couple comments about my attitude, but I think he was just being sensitive. I mean, it is rude to ask if he wants a plate when he's eating fettuccini by the spoonful out of the pot? I don't think so.
